
Chickpea Salad

1 (19 ounce) can chickpeas, rinsed and drained
¼ cup fresh cilantro/coriander, chopped or substitute fresh parsley
¼ cup onion, finely chopped
½ red pepper, chopped
1 large clove garlic, minced
3 tbsp lemon juice
2 tbsp olive oil
cayenne pepper to taste

Combine all the ingredients together and toss well.

Taste for seasoning.

Let the salad stand for about 1 hour and serve.
